Laura Cornelsen

Laura Cornelsen is an Assistant Professor in Health Economics at the London School of Hygiene and Tropical Medicine (LSHTM), working at the intersections of food and health economics. Her current work focuses on the impact of food system changes on population health. She uses large longitudinal data on household food expenditures and employs econometric analyses to understand patterns of expenditures and to test how changes in food prices, policies and voluntary changes implemented by the food industry affect food purchases and diets. Cornelsen also uses stated preference methods, such as discrete choice experiments to better understand prospective effects of health-related food policies.
